  • 3 tablespoons vegetable oil
  • 4 venison shanks
  • 4 heads of garlic, peeled
  • Salt
  • ¾ cup white wine
  • ½ cup chicken stock
  • Lemon zest
  • 2 tablespoons unsalted butter
  • 1 teaspoon dried thyme
  • 1 tablespoon chopped fresh rosemary, plus more for garnish
